Oreo Cupcakes


After reading The Londoner's post on her amazing Double Stuffed Oreo Cake I was inspired to make these yummy oreo cupcakes! I'd say it took me about 30-45mins to do and was possibly the easiest baking I've ever done. All you need is

2 x Double choc cupcake kits
2 x eggs*
400gr icing sugar
200gr softened butter
3 tbsp cold milk
1 lemon
2 packs of Oreos

*check the instructions on your cupcake kit to see if you need these or anything else


Simply follow the instructions on the box to make your cupcakes. All I needed to do was add 2 eggs and 120ml of water and then whisk the mixture together until it goes smooth...


**TIP** Don't bother being lazy like me and using an electric mix, put in a little bit of elbow grease and do it by hand to avoid THIS:


The whisking only takes a couple of minutes so when it's ready you can spoon the mixture evenly into your cases. Then pop them in the oven, preheated at 190 degrees, for 15 minutes - again check the instructions on your mix! While the cupcakes are in the oven you can prepare the Oreo topping. I followed the instructions on The Londoner but here's a quick summary - Cream together the butter and icing sugar, stir in the milk & then add the crushed up Oreos! Put it in the fridge for 5 minutes or so to help it set, you can do this while the cupcakes are cooling.


When you're ready simply smear the topping on the cupcakes and finish off with half an Oreo on top of each one.
Et voila!
