Spicy Peanut Soup


I haven't really done any proper foody posts for a while now, but last week my friend Karen gave me this amazing soup recipe that we just can't seem to keep to ourselves! It actually caught her attention on Come Dine With Me, so she looked up the recipe, whipped it up and brought some in to work for us to sample... Hello new obsession!

(Serves 4)

It takes approximately 30mins to make and, like most recipes I've blogged in the past, is super easy.
Step 1: Use a food processer to blend the onion, garlic, ginger and chilli into a paste. Heat the oil in a pan, add the paste and cook on a gentle heat, until fragrant.

Step 2: Chuck in the tomatoes and vegetable stock, season and allow to simmer for 20minutes.
Step 3: Stir in the peanut butter and then blend your soup. I added an extra spoon of peanut butter but taste it first to be sure. Serve with a good chunky slice of tiger loaf, et voila!


When I've described this recipe to people, most of them have screwed their faces up in disgust, but it's the best soup I've had in a long time - trust me. Even my boyfriend who hates peanut butter AND chilli was impressed. Make sure you let me know if you give it a go :)

  2. That does look very good. I would never have thought about putting peanut butter in soup. My bf is allergic to peanut butter though so I would need to be careful to not make it around him haha.
