another weekend... in the gym #11

It's been a week of goal smashing for me this week... As you may know I set myself the challenge of reducing my body fat percentage to under 20% by 18th May. I got weighed on Thursday and GUESS WHAT!? 19.7% mothertruckers! I hadn't managed to stick to my plan completely so I wasn't sure I was going to manage it but I'm so happy I did! Now I just have to maintain and slowly decrease the %

I didn't really make anything new in the kitchen for this week. Just my usual porridge for breakfast, chicken & veg for lunch and classics like my sweet potato, kale & coconut curry, turkey burgers and omelettes for dinner. These cashew cookie balls from Healthy Wings blog were ridiculously easy to make - I whipped them up on Wednesday night while my dinner was cooking and they didn't last long. I'll probably experiment with different variations over the next few weeks, I'm thinking peanut butter needs to get involved...

Thursday - Metafit & Insanity
Friday - Rest day
Saturday - Rest day
Sunday - Baker Hughes 10k! My time in 2011 was 1 hour 5 minutes - this year I did it in 57 minutes 52 seconds! My goal was to do it in an hour so I'm chuffed! I'm not a good runner and I never will be, but I loved every minute of the race, especially the buzz at the finish line.

It's things like this that make me realise just how much my fitness levels have improved over the last few years. If you'd told me 5 years ago (at a size 16, probably eating pizza & nursing a voddy!) that I would be running even for 10 minutes I would of laughed in your face. If I can change my diet and fitness habits like this then I am 100% sure that anyone can. Don't ever let anyone tell you that you can't.

Rock & Oyster

You've just finished a 10k run, your legs are burning and your belly is rumbling... what do you do? Refuel! After the Baker Hughes race today we headed to Rock & Oyster to do just that. They have a "Lazy Sunday" menu which was just what we needed. 

The interior of the Union Terrace fish restaurant is very sleek and sophisticated. It's a place for wining and dining as well as relaxing with friends. The waitress was friendly & made us feel right at home. She quickly took our drinks order & left us to peruse the menu.

Celebratory prosecco for me! My first drink in a month, it went right to my head. #Lightweight. We skipped starters and dove straight into mains. A whale & chips each please! Ok it was a giant crispy beer battered haddock, which was delicious but we all struggled to finish it. The chunky wedges and tartare sauce were some of the best I've had. It's a good job we didn't do starters - as much as the calamari was calling my name, there was no way I could of eaten both. 

Plus we were saving room for dessert. At just £16.50 for 2 courses it would be rude not to...

Gordon was boring and opted for strawberry ice-cream and M went for the lemon tart. I'm glad I resisted the tart - it was nice but a bit too lemony for my liking. Luckily I chose the rum & raisin panacotta with toffee banana. Holy sh*t. It sounded a bit of a strange combination (and looks like sausage with ice-cream haha!) but I can't even tell you how good it was. It was epic. I polished it off and finished the afternoon with a well warranted food baby!  

The Lazy Sunday menu is short and sweet - you can have 2 courses for £16.50 or 3 for £20 if you can handle it! I enjoyed everything at Rock & Oyster and am dying to sample their a la carte menu one evening. Their Thai style mussels sounds amazing! You'll find the restaurant at 27-29 Union Terrace, Aberdeen.

another weekend... in the gym #10

Made the spiciest turkey chilli ever, ate a crappy cheap steak from Tesco (never again) and made my baked eggs. They're so easy to make - you can read my recipe here. I also made the Asian style cod with pak choi from this clean eating challenge, which was my favourite meal of the week! It's worth looking through the whole challenge for some tasty meal ideas. If you follow me on instagram you'll know I've started doing a daily picture of everything I've eaten. It's just a way for me to keep track of my eating habits and realise just how much I actually eat throughout a typical day! 

Monday - 5k run.
Tuesday - Kettlebells & metafit (kickback matrix... I freaking hate the matrix.)
Wednesday - 5.75k run.
Thursday - Metafit & Insanity class.
Friday - Quick weights sesh at the gym after work.
Saturday - Managed a 10k run in 1 hour 2mins - I did stop and speak to someone for 5 minutes so I'm pleased with that time. Just hope I can do it again next Sunday! Followed it up with weights in the gym. (My usual kettlebells & metafit classes were cancelled as my instructor is off to ShaunTerventionUK!)

Baked Egg Recipe

Technically this dish should be called "Shakshuka" but to be honest I feel like a twat saying that word. I'll stick with the simple "baked eggs". After some experimenting this has become another of my favourite meals. It's the kind of thing you can quickly throw together at the end of a long, busy day and just use up whatever you have to hand. I've started putting bacon in just to please my meat loving other half, but it's just as good without it!

  • 6 eggs
  • 400g tin chopped tomatoes
  • 400g tin chickpeas
  • 2-4 bacon rashers (optional)
  • 1 onion
  • 1 handful kale
  • 1 handful spinach
  • your favourite spices - I use smoked paprika, cinnamon, cumin, garlic, chilli flakes, salt & pepper
Start by pre heating your oven to 180degrees. Chop up your bacon & onions then fry them (I use a wok) in coconut oil for 5 minutes. Add in the drained chickpeas and allow them to heat through a little before you pour in your chopped tomatoes and sprinkle over your spices. I'm not going to tell you specific amounts because I just throw in as little or as much as I like until it tastes good/smells amazing! Bring the whole lot to the boil, then turn the heat down for about 10 minutes. Mix through your greens in the last couple of minutes. Last but not least, crack your eggs on top of the sauce and pop the pan in the oven for 15 minutes... done! This serves 4 people, or you can use up the leftovers for brunch the next day :)

another weekend... in the gym #9

This week I made some chicken fajitas, spicy egg wraps, spaghetti bolognaise, salmon with asparagus, these Strip'd banana coconut muffins and mango chicken quinoa salad. Easy favourites. On my day off I made a spicy chickpea and lentil soup, inspired by The Foodstory Cafe, which was amaaazing if I say so myself. I'll definitely be making it again! My fat loss isn't exactly going to plan. Meals are planned out and stuck to but I have zero willpower and can't say no to chocolate and treats when they're in front of me. My colleagues introduced me to peanut butter scones on Wednesday and I honestly don't know how I've got through life without them so far! 

Monday - Boxercise & Insanity class.
Tuesday - Circuits, kettlebells & metafit.
Wednesday - 6k run.
Thursday - Metafit & insanity class.
Friday - Rest day.
Saturday - Rest day.
Sunday - Gym (HIIT & weights).

Kate Moss x Topshop

This week saw the launch of Kate Moss' 2nd Topshop collection. To be honest I'm not too fussed about it. Don't get me wrong, I love a good sparkly dress or tailored suit but they're just nothing special and seriously overpriced in my opinion. £38 for a cami top, really? On a positive note, if I look half as good as la Moss in my forties I'll be a happy woman.
